Matcha Bliss Balls

When it comes to matcha, there’s just no wrong way to enjoy it. Matcha green tea is particularly delicious blended into a hot cup of water, poured into smoothies, or added to desserts and pastries. Matcha is one of those star ingredients that can just do no wrong. In addition to being delicious and absolutely stunning, it gives you a calm and steady boost of energy and focus that coffee simply can’t compete with.

That’s one of the reasons these delicious and Paleo-friendly matcha bliss balls are so amazing. Matcha contains L-theanine, which promotes a steady, calm alertness… A far cry from the jitters associated with coffee. Matcha is naturally caffeinated, but the presence of L-theanine mitigates the energy crash that’s usually associated with a coffee buzz.

Of course, there’s more than just matcha in these delicious bliss balls. They also contain healthy fats from coconut and almond flour, protein from clean pasture-raised collagen, and antioxidants from cacao nibs (and, of course, the antioxidants in matcha). They’re sweetened only with dates and maple syrup, making them a wholesomely sweet treat.

Ingredients:

1 cup almond flour
1/2 cup coconut flour
1/2 cup shredded coconut
1 cup Medjool dates, pitted
1/4 cup pure maple syrup
1 scoop Vital Proteins Matcha Collagen Original
2 tbsp cacao nibs

Instructions:

  1. In a food processor or high-speed blender, combine the almond flour, coconut flour, shredded coconut, and Matcha Collagen.
  2. After thoroughly mixed, gradually mix in the maple syrup and the dates. After fully mixed, pulse in the cacao nibs until thoroughly combined.
  3. Scoop one tablespoon of the mixture at a time into your hands. Rub into a ball shape, and place on a baking sheet.
  4. Refrigerate for 20-30 minutes, and serve. Store in an air-tight container in the fridge for up to one week.
